A few years ago, the Sandrone family was looking for a way to help restaurants offer older vintages of its wines, and so developed its “Sibi e Paucis” program, a Latin name that translates roughly as “for the few and favored.” Each year, about 10-15% of the production of the Nebbiolo wines (the two Barolo and the Valmaggiore) is held back in the winery’s cellars under optimal ageing conditions. The wine is re-released six years after the vintage for the Valmaggiore, and eight years after the vintage for the two Barolo.
(This is not a “riserva” program of any type, as the use of the word “Riserva” on wine bottles is governed by law in Italy and in the Piedmont is used to specifically indicate wines that receive more cask or barrel ageing as delineated in the local DOC or DOCG regulations.)
Instead, the “Sibi et Paucis” wines are the exact same wine as was originally released, simply held back in the cool and humid Sandrone library cantina for several years. To distinguish these bottles from the regularly released wines, the Sibi et Paucis bottles are adorned with a special silver seal, illustrated here. The Sibi et Paucis wines are labeled only at the time of release so that the labels are immaculate and spotless when the bottles are shipped. These perfectly cellared bottles are offered to clients and restaurants who have demonstrated a long-term commitment to Sandrone wines.

Tonneaux, not Barrique
Sandrone uses multiple coopers, not wanting the style of any one singe barrel-maker to predominate. Barrels are tonneaux size (500 liters) and barriques are not employed here. Coopers include Radoux, Taransaud, Ricard, Pauscha, etc. Barrels are used for 4 or 5 passages. The Barolo are aged in 20-25% new oak.
